
Beetroot ‘en papillote’
Or simply, beetoot cooked in a parcel. Delicious wee side dish or make into a main meal with some goats cheese and seeds.
You will need your beautiful bunch of beets. Leaves removed and bulbs scrubbed. A couple of cloves of garlic, crushed. A slug of balsamic vinegar. A bigger slug of olive oil. A splash of water. And a good sprinkle of salt and pepper.
Mix all the ingredients together, then lay out a sheet of tin foil. Place your beet mix in the middle and fold the foil in half, crimping the edges together.
Put your lovely parcel on a tray and put in a preheated oven (200C). Bake for an hour or so, until the beets feel tender. Remove from the oven and cool slightly before rubbing off the beetroot skin. Slice up how you fancy and toss in the juices. Finally chop up your dill and scatter on top. Simple!
